Winemaker notes:
It takes a special vintage to make the Blanc du Rouge, and I love when I can make this wine—a white wine from red grapes!

 

The Blanc du Rouge is truly one of the most unique and fascinating wines we produce. Given the right fruit characteristics, vintage, and ideal conditions, we able to produce the Blanc du Rouge. Yes, the Blanc is 100% Cabernet Sauvignon and is made from the same exact fruit as our 2018 Cabernet Sauvignon; only the style of winemaking changes. It is styled using a saignée method, a procedure whereby we draw off juice as we’re processing the fruit. As we de-stem the fruit, berries and juice fall into the fermentation vat, and from there we draw off a portion of juice, route it into a stainless steel tank, and that will become our Blanc du Rouge. As is ferments, it has a slight pink hue, but after clarifying and filtering, it becomes the a “white” wine.

 

The Blanc du Rouge has a unique phenolic structure with hearty acids lending toward it’s incredible potential for ageing. This is a wine you will definitely want to try!

 

Fruit for the Blanc du Rouge is from the Johnson Family Vineyard located slightly north and west of Paso Robles, and is just a few miles inland from Hearst Castle on the east side of the Santa Lucia Mountains.
